The No-Bake Peanut Butter Cheesecake That’s Pure Bliss
You know that moment. You take a bite of something and your eyes close involuntarily. It’s creamy, it’s rich, it’s peanut buttery, and it’s topped with chocolate and peanut butter cups. That’s this cheesecake.
It’s a no-bake dream. A buttery graham cracker crust. A velvety filling made with cream cheese, peanut butter, and Greek yogurt. Mini chocolate chips folded throughout. And a crown of cream cheese frosting and peanut butter cups. It’s everything you love about peanut butter and chocolate, in one slice.
I started making this when I wanted a cheesecake that didn’t require the oven, the water bath, or the anxiety of “will it crack?” This one is foolproof. It sets in the freezer, it slices beautifully, and it tastes like you spent hours on it. It’s become my go-to for birthdays, holidays, and any time I need a dessert that will make people go “wow.”
Why This Cheesecake Works
- No-Bake and Make-Ahead. The freezer does all the work.
- Creamy, Peanut Buttery, and Chocolatey. The perfect flavor combination.
- Foolproof. No water bath, no cracks, no stress.
- Beautiful Presentation. The frosting and peanut butter cups make it look bakery-worthy.
What You’ll Need
For the Crust:
- 1 sleeve of graham crackers, crushed
- 1 tablespoon sugar
- 4 tablespoons butter, melted
For the Filling:
- 3 (8 oz) packages cream cheese, softened
- 1 cup sugar
- ½ cup Greek yogurt
- 1 teaspoon vanilla extract
- 1 cup full-fat peanut butter
- 1 cup powdered sugar
- ½ cup mini chocolate chips
For the Topping:
- 1 container cream cheese frosting
- Regular-size peanut butter cups, halved

Let’s Make It
Step 1: Prepare the Pan
Line the bottom of a 6-inch springform pan with parchment paper.
Step 2: Make the Crust
Crush the graham crackers in a food processor until fine crumbs form. Add the sugar and pulse to blend. Pour the crumbs into a bowl with the melted butter and stir until well coated. Press the mixture evenly into the bottom of the prepared pan. Place in the freezer to set.
Step 3: Make the Filling
In a stand mixer, blend the softened cream cheese and sugar on low until smooth. Scrape down the bowl and blend on medium-high until creamy. Add the Greek yogurt and vanilla and blend until smooth. Add the peanut butter and powdered sugar and blend on low, then on high until smooth and creamy. Gently fold in the mini chocolate chips.
Step 4: Assemble
Remove the pan from the freezer and pour the peanut butter cheesecake filling into the springform pan. Smooth the top. Place the pan back in the freezer overnight to set.
Step 5: Decorate
About 30 minutes before serving, prepare a pastry bag with a large fluted tip and fill it with cream cheese frosting. Remove the cheesecake from the freezer and run a sharp knife around the sides to release it. Remove the springform. Pipe large dollops of frosting around the edge and place halved peanut butter cups between the dollops.
Step 6: Serve
Return to the freezer until ready to serve. Cut into slices and serve immediately.

A Few Things I’ve Learned
- Full-fat is best. Cream cheese and peanut butter both need their fat for the right texture and flavor.
- Freeze overnight. This is not a suggestion. The cheesecake needs time to set completely.
- Hot knife, clean slices. Dip your knife in hot water and wipe it dry between cuts. It makes all the difference.
- Decorate just before serving. The frosting and peanut butter cups look best fresh.
Variations
- Chocolate Swirl: Melt chocolate chips and swirl into the filling before freezing.
- Oreo Crust: Use crushed Oreos instead of graham crackers.
- Nutella Cheesecake: Replace half the peanut butter with Nutella.
- Crunchy Peanut Butter: Use crunchy peanut butter for added texture.
- Caramel Drizzle: Drizzle caramel sauce over the top before adding frosting.
- Mini Cheesecakes: Make individual portions in a muffin tin.
