Let’s Make It

Step 1: Make the Dressing
In a small bowl, whisk together the lime juice, avocado oil, honey, grated garlic, salt, cumin, and a few grinds of pepper. Set aside.

Step 2: Prep the Garnish
Set aside a small amount of the jalapeño, red onion, and cilantro for garnish at the end. This little extra on top makes the salad look (and taste) special.

Step 3: Assemble the Salad
In a medium bowl, add the avocado pieces. Arrange the cucumber, tomatoes, and remaining jalapeño, red onion, and cilantro on top. Drizzle with most of the dressing and gently stir. Be careful here. Too much mixing and you’ll end up with guacamole—delicious, but not what we’re after.

Step 4: Finish and Serve
Top with the reserved jalapeño, red onion, and cilantro. Drizzle with a little more dressing. Add a sprinkle of flaky sea salt if you have it. Serve immediately.
