A Few Things I’ve Learned

  • Cut them even. Uniform pieces = even cooking. No burnt tiny pieces and raw big pieces.
  • Don’t crowd the pan. If they’re all piled on top of each other, they’ll steam. Use two pans if you have to.
  • Hot oven is key. 425°F is the sweet spot. Hot enough to crisp, not so hot that they burn.
  • Fresh out of the oven is best. They lose crispiness as they sit. Eat them hot.

  • Add parmesan. Sprinkle grated parmesan during the last 5 minutes of baking.
  • Add lemon zest. Toss with fresh lemon zest after roasting for brightness.
  • Make it spicy. Add cayenne or red pepper flakes to the seasoning.
  • Add herbs. Toss with fresh parsley, thyme, or rosemary after roasting.
  • Balsamic drizzle. A drizzle of balsamic glaze takes it to another level.
