Easy Strawberry Shortcake for Gatherings

The Homemade Strawberry Shortcake That Tastes Like Summer

You know that dessert. The one that shows up at every summer gathering, the one that makes everyone’s eyes light up the second they see it on the table. That’s this shortcake.

It’s not complicated. It’s not fussy. It’s just good. The biscuits come out crisp on the outside, soft and flaky on the inside—the kind of biscuit you’d be happy to eat all on its own. The strawberries get tossed with sugar and left to sit until they release all those gorgeous juices, creating a sweet, syrupy sauce that soaks into every bite. And the whipped cream? Light, barely sweet, and the perfect cloud-like finish to bring it all together.

I started making this when I wanted a dessert that felt like summer on a plate—something that tasted like a warm afternoon and a reason to slow down. It’s become my go-to for BBQs, picnics, and any gathering where I want people to feel taken care of. It’s simple, it’s beautiful, and it’s absolutely irresistible. And honestly? Once you make it, it’ll probably become your go-to too.

Why This Shortcake Works

Tender, Flaky Biscuits. Cold butter and buttermilk create layers that are crisp outside and soft inside.

Sweet, Juicy Strawberries. Macerating them in sugar draws out their natural juices, creating a syrup that soaks into the biscuits.

Light, Cloud-Like Whipped Cream.

Make-Ahead Friendly. Each component can be made in advance and assembled just before serving.

What You’ll Need

For the Strawberries + Whipped Cream:

  • 6–7 cups quartered strawberries
  • ¼ cup + 2 tablespoons (75g) granulated sugar, divided
  • 1 teaspoon pure vanilla extract
  • 1 cup (240ml) heavy cream

For the Biscuits:

  • 2¾ cups (345g) all-purpose flour, plus extra for hands and work surface
  • ¼ cup (50g) granulated sugar
  • 4 teaspoons aluminum-free baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon fine sea salt
  • ¾ cup (12 Tbsp; 170g) unsalted butter, cold and cubed

Let’s Make It

(The strawberry shortcake that tastes like pure summer—flaky biscuits, juicy berries, and clouds of whipped cream)

Step 1: Prepare the Strawberries
Grab a big bowl and stir those strawberries together with ¼ cup of the granulated sugar. Cover it up and pop it in the fridge—they’ll hang out there, getting all juicy and syrupy while we make the biscuits. Honestly, that sweet strawberry liquid at the bottom? That’s liquid gold. Don’t you dare throw it away.

Step 2: Preheat and Prep
Go ahead and preheat your oven to 400°F (204°C). It needs to be good and hot before those biscuits go in—that’s what gives them their beautiful rise.

Step 3: Mix the Dry Ingredients
In a large bowl—or your food processor, if you’re using one—mix together the flour, granulated sugar, baking powder, baking soda, and salt. Whisk or pulse until it’s all evenly combined. Nothing fancy here, just get it mixed.

Step 4: Cut in the Butter
Now add those cold, cubed butter pieces. Cut them into the dry ingredients with a pastry cutter, or pulse in the processor until you’ve got coarse crumbs. If you’re using a processor, pour it all into a large bowl now. See those little cold butter pockets? That’s the secret to flaky layers. Don’t overdo it—you want some pea-sized butter bits still hanging around.

Step 5: Add the Buttermilk
Pour that cold buttermilk right on top. Fold everything together gently with a spoon or spatula until it just starts to come together. And I mean just—the dough should look shaggy, crumbly, and honestly a little messy, with some wet spots here and there. That’s exactly what you want. Overworking it now means tough biscuits later, and we’re not about that.

Step 6: Fold and Flatten
Turn the dough out onto a floured surface. With generously floured hands—don’t be shy with the flour—gently bring it together into a rough mass. Flatten it into a rectangle about ¾-inch thick. Then fold one side into the center, and the other side over that. Turn the dough horizontally, flatten again, and repeat the folding and flattening two more times. This is the part that builds all those gorgeous, buttery layers. It’s a little bit of work, but it’s so worth it.

Step 7: Cut the Biscuits
Cut into 2.75- or 3-inch circles with a biscuit cutter. And here’s the golden rule: don’t twist. Press straight down, lift straight up. Twisting seals the edges and stops them from rising tall and proud. Re-roll the scraps and cut more circles until you’ve got 10 to 12 biscuits.

Step 8: Arrange and Bake
Arrange the biscuits in a 10-inch cast iron skillet, or close together on a parchment-lined baking sheet. Make sure they’re touching—they help each other rise and get nice and tall. Brush the tops with heavy cream or buttermilk, then sprinkle with coarse sugar for that beautiful, crunchy top. Bake for 18 to 22 minutes, until they’re golden brown and your kitchen smells like a dream. Let them cool in the pan for at least 10 minutes—I know it’s hard to wait, but you’ll be glad you did.

Step 9: Make the Whipped Cream
Beat the heavy cream, remaining 2 tablespoons granulated sugar, and vanilla on medium-high speed until soft-medium peaks form—about 3 minutes. It should be light, fluffy, and just barely hold its shape. Taste it. You’re welcome.

Step 10: Assemble
Slice the biscuits in half, layer with those juicy, syrupy strawberries and a big dollop of whipped cream, and serve immediately. Take a bite, close your eyes, and enjoy every flaky, creamy, fruity second.

Now go ahead—build yourself a little masterpiece, grab a fork, and enjoy every single bite. You just made summer on a plate.

A Few Things I’ve Learned

Cold everything. Cold butter, cold buttermilk, evencold flour if you can. It creates the flakiest biscuits.

Don’t overwork the dough. The folding creates layers. Overworking makes them tough.Don’t twist the cutter. Twisting seals the edgesand prevents rising.

Assemble just before serving. The biscuits will get soggy if they sit with the strawberries too long.

Variations

Mixed Berry: Use a mix of strawberries, blueberries, andraspberries.

Peach Shortcake: Swap strawberries for sliced peaches.

Chocolate Shortcake: Add ¼ cup cocoa powder to the biscuit dough.

Lemon Shortcake: Add 1 tablespoon lemon zest to the biscuit dough.

Gluten-Free: Use a 1-to-1 gluten-free flour blend.

Your Shortcake Questions, Answered

Q: Can I use frozen strawberries?
A: Fresh is best. Frozen will release too much liquid and make the biscuits soggy.

Q: Can I make the biscuits ahead of time?
A: Yes. Make them up to 3 days ahead and store covered at room temperature. Or freeze for up to 3 months.

Q: Can I use whipped topping instead of homemade whipped cream?
A: Yes, but homemade whipped cream is so much better. It’s worth the extra few minutes.

Q: Can I use a different pan?
A: A cast iron skillet or baking sheet both work. Just make sure the biscuits are touching.

Q: How do I keep the biscuits from getting soggy?
A: Assemble just before serving. The longer the biscuits sit with the strawberries, the softer they’ll get.
