Let’s Make It! (The Directions)

This creamy White Chicken Chili is the ultimate comfort food! Packed with tender chicken, green chiles, and white beans in a luxuriously creamy broth, it’s an easy, one-pot meal that’s ready in under an hour.

Ingredients

  • 1 tbsp olive oil

  • 1 small yellow onion, diced

  • 2 cloves garlic, minced

  • 2 (14.5 oz) cans chicken broth

  • 1 (7 oz) can diced green chiles

  • 1 tsp ground cumin

  • ½ tsp paprika

  • ½ tsp dried oregano

  • ¼ tsp ground coriander

  • ⅛ tsp cayenne pepper

  • Salt and black pepper, to taste

  • 1 (8 oz) package Neufchâtel cheese, cubed

  • 1 ¼ cups corn (frozen or canned)

  • 2 (15 oz) cans cannellini beans, drained and rinsed

  • 2 ½ cups shredded rotisserie chicken

  • 2 tbsp fresh lime juice

  • ¼ cup chopped fresh cilantro

Directions

  • In a large pot, heat olive oil over medium-high heat. Add onion and sauté until soft, about 4 minutes. Add garlic and cook for 30 seconds until fragrant.
  • Stir in the chicken broth, green chiles, cumin, paprika, oregano, coriander, cayenne, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
  • Remove 1 cup of the cannellini beans and place them in a blender with ¼ cup of the hot broth from the pot. Blend until smooth.
  • Reduce the heat to low. Add the Neufchâtel cheese to the pot, stirring until melted and smooth.
  • Stir in the corn, remaining whole beans, and the blended bean mixture. Simmer for 5-10 minutes to thicken.
  • Stir in the shredded chicken, lime juice, and cilantro. Heat through. Taste and adjust seasoning. Serve with your favorite toppings.

Notes

  • For a spicier kick, add a diced jalapeño with the onion.
  • Regular cream cheese can be used if you can’t find Neufchâtel.
  • This chili freezes wonderfully! Cool completely and store in an airtight container for up to 3 months.
