Strawberry Cheesecake Dump Cake (So Easy!)

Strawberry Cheesecake Dump Cake (So Easy!)

You know that moment. You need a dessert. You need it to be impressive. You need it to feed a crowd. And you need it to be easy enough that you don’t stress about it. This is that dessert.

It’s called a dump cake, which sounds rustic, but the results are anything but. Layers of sweet strawberry pie filling, creamy cheesecake, and a golden cake topping that bakes into a crisp, buttery crust. It’s like strawberry cheesecake and coffee cake had a beautiful baby, and it’s absolutely irresistible.

I made this for a potluck once, not expecting much. It was one of those “I just need to bring something” desserts. It ended up being the first thing to disappear. People asked for the recipe before they even finished their plates. It’s become my go-to for everything—birthdays, holidays, or just a Tuesday that needs a little something sweet.

  • No Mixing, No Fuss. Just layer and bake. The oven does all the work.
  • That Creamy Cheesecake Layer. It melts into the strawberries as it bakes, creating pockets of creamy goodness.
  • Warm and Cozy or Cold and Clean. Serve it warm with ice cream, or chill it for clean, structured slices.
  • Always a Crowd-Pleaser. It’s sweet, creamy, fruity, and impossible to resist.

For the Fruit and Cheesecake Layer:

  • 2 cans (15 oz each) strawberry pie filling
  • 8 oz full-fat cream cheese, softened
  • 1 large egg, room temperature
  • ¼ cup granulated sugar

For the Cake Topping:

  • 1 box (about 15–16 oz) white, yellow, or vanilla cake mix
  • ½ cup cold unsalted butter, thinly sliced

Optional Garnishes:

  • Fresh sliced strawberries
  • Whipped cream
  • Vanilla ice cream
  • Powdered sugar
  • White chocolate shavings

Step 1: Preheat and Prep
Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.

Step 2: Create the Strawberry Base
Pour both cans of strawberry pie filling into the dish. Spread into an even layer.

Step 3: Make the Cheesecake Layer
In a medium bowl, beat together the cream cheese, egg, and sugar until smooth. Drop spoonfuls over the strawberry layer and gently spread.

Step 4: Add the Cake Mix
Sprinkle the dry cake mix evenly over the cheesecake layer. Do not stir.

Step 5: Add the Butter
Arrange the cold butter slices evenly over the top of the cake mix.

Step 6: Bake
Bake for 40 to 45 minutes, until the top is golden and the filling is bubbling around the edges.

Step 7: Cool and Serve
Let the cake rest for at least 15 minutes before serving. Serve warm with ice cream, or chill for cleaner slices.

  • Use cold butter. It melts slowly as it bakes, creating a more even, crisp topping. Melted butter can leave dry patches.
  • Don’t stir. I know it’s tempting. But the layers are what make this work. The butter and cake mix will do their thing in the oven.
  • Room temperature cream cheese. It blends so much smoother. Cold cream cheese leaves lumps.
  • Let it rest. Cutting in too soon can make the filling runny. Give it at least 15 minutes.

  • Cheesecake Swirl: Instead of spreading the cheesecake layer, swirl it lightly with a knife.
  • Fresh Berry Upgrade: Scatter fresh blueberries or sliced strawberries over the pie filling.
  • Chocolate Lovers: Use chocolate cake mix and drizzle with hot fudge.
  • Lemon Strawberry: Add 1 teaspoon lemon zest to the cheesecake layer.
  • Gluten-Free: Use a certified gluten-free cake mix.

Q: Can I use a different pie filling?
A: Yes. Cherry, blueberry, or peach all work beautifully.

Q: Can I make this ahead of time?
A: Yes. Assemble the base and cheesecake layer ahead, refrigerate, then add cake mix and butter right before baking.

Q: Can I use a different cake mix?
A: Yes. White, yellow, or vanilla all work. Chocolate gives a richer flavor.

Q: How do I get clean slices?
A: Chill the cake completely before slicing. It holds its shape better when cold.

Q: Can I freeze this?
A: Yes. Wrap tightly and freeze for up to 2 months. Thaw overnight in the fridge.
